If you were given the clue Many service dogs, after 29-Across, and 29-Across was They get stuffed at Greek restaurants, what would you come up with?

The answer would be EMNSHEHRDS.

Here's why:  Many service dogs are German shepherds. Grape leaves get stuffed at Greek restaurants. If each letter in G-R-A-P-E "leaves" GERMAN SHEPHERDS, you are left with EMNSHEHRDS. (The letters in GRAPE are dropped from GERMAN SHEPHERDS in order - i.e. first the G and then the R, leaving the first E.)
