What all the pairs have in common:
You can swap the first letter of the first word with the last letter of the second word to form two new words.

Which pair is the odd one out?
GALL - BIT is the odd one out. The second property all the other pairs share is that the two new words are opposites:

YELL - BUS - - - SELL - BUY
REAR - FAN - - - NEAR - FAR
TRY - WED - - - DRY - WET
GALL - BIT - - - TALL - BIG (not opposites)
WHEN - NOT - - - THEN - NOW
SO - YEN - - - NO - YES
LUSH - PULP - - - PUSH - PULL
